TrinitasCellars Chardonnay from Carneros and fresh Halibut from Chef Laurent PX Berthon

The excitement builds as we open the Chardonnay from Trinitas Cellars.Winemaker Kevin Mills tell us of the great Carneros region and the world class Chardonnays and Pinot Noirs that are produced in the region.Carneros is located in between the towns of Napa and Sonoma,and sits right on the Bay.This brings in the cooling influences of the ocean,and may produce a 40 or 50 degree cooling in the course of each day.This allows the fruit to have a balance between the essence of the fruit and the acid in the wine.Alaskan Halibut is in full season and is a perfect match for the Chardonnays from this wine region.Chef Laurent is a master of world cuisine,and it's time to FEEEEEEED DOC!CHEERS!
